  • 24 Cherry Tomatoes
  • 4 oz Feta Cheese
  • 2 oz Cream Cheese
  • 2 tbsp Fresh Dill
  • 1 tbsp Fresh Mint
  • 1 clove Garlic
  • 1 tbsp Olive Oil
  • 1 tsp Lemon Juice
  • to taste Salt
  • to taste Black Pepper

Prepare the Tomatoes

Wash the cherry tomatoes and gently pat them dry. Using a small, sharp knife, carefully cut a small 'x' on the bottom of each tomato. This will allow you to easily remove the pulp and create space for the filling.

Remove the Pulp

Using a small spoon or melon baller, carefully scoop out the pulp from each tomato. Be careful not to puncture the sides of the tomato. Discard the pulp or save it for another recipe.

Whip the Feta Filling

In a food processor or with an electric mixer, combine the feta cheese and cream cheese. Process or beat until smooth and creamy. Add the minced garlic, chopped dill, chopped mint, olive oil, and lemon juice. Season with salt and pepper to taste. Process or beat again until well combined.

Fill the Tomatoes

Transfer the whipped feta mixture to a piping bag fitted with a small tip, or use a small spoon. Carefully fill each cherry tomato with the feta mixture, slightly overfilling them for a nice presentation.

Chill and Serve

Arrange the stuffed cherry tomatoes on a serving platter. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled and enjoy!
