Spicy Chorizo Stuffed Mussels

These chorizo stuffed mussels deliver a flavour punch! The salty mussels combine with smoky chorizo and zesty lemon to create a perfect hot appetizer. A little spice gives them an extra kick.

Ingredients
  • 2 lbs Fresh Mussels
  • 4 oz Chorizo
  • 1/2 Onion
  • 1/2 Red Bell Pepper
  • 2 cloves Garlic
  • 1/4 cup White Wine
  • 1/2 teaspoon Smoked Paprika
  • 1/4 teaspoon Cayenne Pepper
  • 2 tablespoons Fresh Parsley
  • 1/2 Lemon
  • 1 tablespoon Olive Oil

Clean Mussels

Scrub mussels well under cold running water. Remove any beards.

Steam Mussels

In a large pot, add about 1/2 inch water. Bring to boil. Add mussels, cover and steam until they open, about 5-7 minutes. Discard any that do not open.

Prep Mussels

Let mussels cool slightly. Remove the top shell, leaving the mussel in the bottom shell. Reserve some of the mussel broth. Arrange the mussels in a baking dish.

Cook Chorizo

Heat olive oil in a skillet over medium heat. Add crumbled chorizo and cook until browned and crispy, about 5-7 minutes. Remove chorizo from skillet and set aside, reserving the chorizo oil in the pan.

Sauté Vegetables

In the same skillet with the chorizo oil, add the chopped onion and red bell pepper. Sauté until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Deglaze and Combine

Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom. Cook until the wine has almost completely evaporated, about 2-3 minutes. Add the smoked paprika and cayenne pepper. Stir in the cooked chorizo and chopped parsley.

Stuff and Bake

Spoon the chorizo mixture over each mussel. Drizzle with a little lemon juice and a spoonful of reserved mussel broth. Bake in a preheated oven at 375°F (190°C) for 10-15 minutes, or until heated through and bubbly.

Serve

Garnish with extra fresh parsley and serve immediately with lemon wedges.

  • What if I can't find chorizo?

    You can substitute with another spicy sausage, such as andouille.
  • Can I add breadcrumbs to this recipe?

    Yes, you can add a layer of breadcrumbs on top of the chorizo mixture before baking for added texture. Mix about 1/2 cup of breadcrumbs with a tablespoon of olive oil and sprinkle over the stuffed mussels.
  • How spicy are these?

    The spiciness can be adjusted to your liking. Reduce or omit the cayenne pepper for a milder flavor. You can also use a milder chorizo.
