Ingredients
  • 1 lb Beef tenderloin, cut into 1-inch cubes
  • 3 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme
  • 2 cloves Garlic, minced
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 10 Wooden skewers
  • 1 cup Greek yogurt
  • 1/2 Cucumber, grated and squeezed dry
  • 2 tbsp Fresh dill, chopped

Preparing the Beef Marinade

In a medium bowl, combine the olive oil, lemon juice, dried oregano, dried thyme, minced garlic, salt, and black pepper. Whisk together until well combined.

Marinating the Beef Tenderloin

Add the cubed beef tenderloin to the marinade. Toss to coat evenly. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.

Making the Tzatziki Dip

While the beef is marinating, prepare the tzatziki dip. In a separate bowl, combine the Greek yogurt, grated and squeezed cucumber, chopped fresh dill, minced garlic, a drizzle of olive oil, a squeeze of lemon juice, and a pinch of salt. Mix well and refrigerate until serving.

Assembling the Beef Kebabs

Soak the wooden skewers in water for 30 minutes to prevent burning. Thread the marinated beef cubes onto the skewers, leaving a small space between each piece.

Grilling the Kebabs to Perfection

Preheat your grill to medium-high heat. Grill the kebabs for 4-5 minutes per side, or until the beef is cooked to your desired level of doneness. Be careful not to overcook them, as beef tenderloin is best served medium-rare or medium.

Serving with Tzatziki Dip

Remove the grilled beef kebabs from the grill and serve immediately with the chilled tzatziki dip on the side. Garnish with extra fresh dill or a lemon wedge for added flavor and presentation.

FAQ

  • Can I use a different type of yogurt for the tzatziki?

Greek yogurt is recommended for its thickness and tangy flavor. However, if you don't have Greek yogurt, you can use plain yogurt, but you may need to strain it to remove excess liquid.
  • Can I add other vegetables to the kebabs?

Yes, you can add vegetables such as bell peppers, onions, or cherry tomatoes to the skewers along with the beef. Just be sure to cut the vegetables into similar sizes as the beef cubes.
  • How long can I store leftover tzatziki sauce?

Leftover tzatziki sauce can be stored in an airtight container in the refrigerator for up to 3 days. The flavor may intensify over time.
