  • 2 cups, shredded Cooked Chicken
  • 1/2 cup, finely chopped Onion
  • 1/2 cup, finely chopped Red Bell Pepper
  • 2 cloves, minced Garlic
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1 package Store-bought Empanada Dough
  • 1 , beaten (for egg wash) Egg

Prepare the Filling

Heat olive oil in a skillet over medium heat. Add the chopped onion and red bell pepper and cook until softened, about 5 minutes. Add the minced garlic, cumin, chili powder, salt, and pepper. Cook for another minute until fragrant.

Combine Ingredients

Add the shredded cooked chicken to the skillet and stir to combine with the vegetables and spices. Cook for 2-3 minutes, allowing the flavors to meld together. Remove from heat and let cool slightly.

Assemble the Empanadas

On a lightly floured surface, roll out the empanada dough. Use a 3-inch cookie cutter or a small bowl to cut out circles. Place a spoonful of the chicken filling in the center of each circle. Fold the dough over to form a half-moon shape. Press the edges together with a fork to seal. Place the empanadas on a baking sheet lined with parchment paper.

Egg Wash and Bake

Brush the top of each empanada with the beaten egg. This will give them a golden-brown color. Preheat oven to 375°F (190°C). Bake for 15-20 minutes, or until golden brown.
