Ingredients
  • 1 lb Spanish Chorizo
  • 8 oz Manchego Cheese
  • 1 Red Bell Pepper
  • 2 Roma Tomatoes
  • 1/4 cup Almonds
  • 2 cloves Garlic
  • 2 tbsp Red Wine Vinegar
  • 1/4 cup Olive Oil
  • 1/2 tsp Smoked Paprika
  • 1/4 tsp Salt
  • 1/8 tsp Black Pepper

Prepare the Romesco Sauce

Preheat your broiler. Place the red bell pepper and tomatoes on a baking sheet and broil until the skins are blackened and blistered, about 10-15 minutes, turning occasionally. Let them cool slightly, then peel off the skins and remove the seeds. In a food processor, combine the roasted bell pepper, tomatoes, almonds, garlic, red wine vinegar, olive oil, smoked paprika, salt, and pepper. Process until smooth. Taste and adjust seasonings as needed.

Cook the Chorizo

Cut the chorizo into 1/2-inch thick slices. Heat a large skillet over medium heat. Add the chorizo slices to the skillet and cook for about 3-4 minutes per side, or until they are browned and cooked through. Remove the chorizo from the skillet and let it cool slightly.

Assemble the Skewers

Cut the manchego cheese into 1/2-inch cubes. Thread the chorizo slices and manchego cheese cubes onto skewers, alternating between the two. Arrange the skewers on a serving platter. Serve the skewers with the romesco sauce for dipping.
