Ingredients

  • 2 cups Fresh pineapple chunks
  • 1/4 cup Soy sauce
  • 2 tablespoons Brown sugar
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Sesame oil
  • 2 cloves, minced Garlic
  • 1 teaspoon, grated Ginger
  • 1/4 teaspoon (optional) Red pepper flakes
  • 1/2 cup Peanut butter
  • 1/4 cup Coconut milk
  • 2 tablespoons Lime juice
  • 1 tablespoon Honey
  • 2-4 tablespoons (as needed) Water
  • 2 tablespoons, for garnish Chopped peanuts
  • As needed Skewers

Prepare the Chicken and Pineapple

Cut the chicken breasts into 1-inch cubes. Ensure the pineapple chunks are roughly the same size as the chicken.

Marinate the Chicken

In a bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes (if using). Add the chicken cubes and toss to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours.

Make the Peanut Sauce

In a separate bowl, whisk together the peanut butter, coconut milk, lime juice, honey, and water. Add water gradually until the sauce reaches your desired consistency. It should be thick but pourable.

Assemble the Skewers

Thread the chicken and pineapple chunks onto skewers, alternating between them. Leave a small gap between each piece to ensure even cooking.

Grill the Satay

Preheat your grill to medium heat. Lightly oil the grates to prevent sticking. Grill the skewers for 5-6 minutes per side, or until the chicken is cooked through and the pineapple is slightly caramelized. Internal temperature of chicken should reach 165°F (74°C).

Serve

Remove the skewers from the grill and let them rest for a couple of minutes. Serve warm with the peanut sauce and garnish with chopped peanuts.
