  • 1/4 Red onion
  • 1/2 Jalapeño pepper
  • 1/4 cup Cilantro
  • 2 tbsp Lime juice
  • 2 tbsp Olive oil
  • 1/2 tsp Salt

Char the Corn

Cool and Cut the Corn

Let the corn cool slightly, then carefully cut the kernels off the cob using a sharp knife.

Prepare the Remaining Ingredients

Dice the avocado into small cubes. Finely chop the red onion and jalapeño pepper (remove seeds for less heat). Chop the cilantro.

Combine the Ingredients

In a large bowl, combine the charred corn kernels, diced avocado, chopped red onion, chopped jalapeño, and cilantro.

Make the Dressing

In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper. Pour the dressing over the salad and toss gently to combine.

Serve

Serve the Charred Corn Salad immediately or chill for later. It's best served fresh.
