  • 4 oz Feta Cheese
  • 4 oz Halloumi Cheese
  • 1/2 cup Kalamata Olives
  • 1/4 cup Sun-Dried Tomatoes
  • 1 Cucumber
  • 1 Red Bell Pepper
  • 1/4 cup Fresh Mint Leaves
  • 1 Pita Bread
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice
  • 1/2 teaspoon Dried Oregano

Prepare the Halloumi

Slice the Halloumi cheese into 1/4-inch thick pieces. Heat a lightly oiled skillet over medium heat. Cook the Halloumi for 2-3 minutes per side, or until golden brown and slightly softened. Remove from the skillet and set aside to cool slightly.

Assemble the Platter

Arrange the Feta cheese, grilled Halloumi, Kalamata olives, and sun-dried tomatoes on a large platter or serving board. Add the sliced cucumber and red bell pepper around the cheeses.

Garnish and Serve

Sprinkle fresh mint leaves over the platter. Drizzle with olive oil and lemon juice. Season with dried oregano. Serve immediately with pita bread wedges for dipping and scooping. The Halloumi is best served warm, but it is fine at room temperature as well.
