Refreshing Watermelon Gazpacho

Ingredients
- 800g Seedless Watermelon
- 200g Ripe Tomatoes
- 1/4 Cucumber
- 1/4 Red Onion
- 1/4 Red Bell Pepper
- 2 tbsp Lime Juice
- 3 tbsp Olive Oil
- 1/4 cup Fresh Mint Leaves
- to taste Salt
- to taste Black Pepper
Prepare the Ingredients
Cut the watermelon into chunks and remove any seeds. Roughly chop the tomatoes, cucumber, red onion, and red bell pepper. Roughly chop the mint.
Blend the Gazpacho
In a high-speed blender, combine the watermelon, tomatoes, cucumber, red onion, red bell pepper, lime juice, olive oil, and mint leaves. Season with salt and pepper.
Blend to Desired Consistency
Blend until smooth. Taste and adjust seasoning as needed. If you prefer a thinner consistency, add a little water, but be careful not to dilute the flavor too much.
Chill and Serve
Pour the gazpacho into a container and chill in the refrigerator for at least 2 hours before serving. Serve cold, garnished with a sprig of mint or a small watermelon wedge.
