Spicy Chorizo Sausage Rolls

Ingredients
- 2 sheets Puff Pastry
- 1 lb Chorizo Sausage
- 1/2 cup Breadcrumbs
- 1 Egg
- 1/2 Red Onion
- 1/4 Red Bell Pepper
- 1/2 teaspoon Chili Powder
- 1/4 teaspoon Smoked Paprika
- 1/4 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1 tablespoon Milk
Prepare the Chorizo Filling
In a large bowl, combine the chorizo sausage (removed from casings), breadcrumbs, chopped red onion, chopped red bell pepper, chili powder, smoked paprika, salt, and pepper. Mix well with your hands until all ingredients are evenly distributed.
Roll Out the Pastry
Lightly flour a clean surface. Unfold one sheet of puff pastry. If the pastry is very cold, let it sit for a few minutes to soften slightly. Cut the pastry sheet in half lengthwise.
Assemble the Sausage Rolls
Divide the chorizo mixture in half. Shape each half into a long log, about the same length as the pastry strips. Place one chorizo log along the center of each pastry strip.
Seal and Cut
Brush one edge of the pastry with a little water or milk. Fold the other side of the pastry over the chorizo filling, sealing the edges tightly with a fork. Cut each sausage roll into 6 equal pieces.
Prepare for Baking
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the sausage rolls on the prepared baking sheet, seam-side down.
Egg Wash and Bake
In a small bowl, whisk together the remaining egg with a tablespoon of milk to create an egg wash. Brush the tops of the sausage rolls with the egg wash. This will give them a golden-brown color.
Baking Time
