Ingredients
  • 250 g Halloumi cheese
  • 1 medium Zucchini
  • 2 medium Bell peppers (red, yellow)
  • 1 medium Red onion
  • 200 g Cherry tomatoes
  • 3 tbsp Olive oil
  • 1 tbsp Lemon juice
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Prepare the Vegetables

Wash and chop the zucchini, bell peppers, and red onion into bite-sized pieces. Halve the cherry tomatoes. Place all the vegetables in a large bowl.

Make the Marinade

In a small bowl, whisk together olive oil, lemon juice, dried oregano, dried thyme, salt, and black pepper. Pour the marinade over the vegetables and toss to coat evenly.

Prepare the Halloumi

Cut the halloumi cheese into 1-inch cubes. Add the halloumi to the bowl with the vegetables and toss gently to combine.

Assemble the Skewers

Thread the vegetables and halloumi cheese onto skewers, alternating between them. Ensure the skewers are not overcrowded.

Grill the Skewers

Preheat your grill to medium heat. Place the skewers on the grill and cook for 5-7 minutes per side, or until the vegetables are tender and slightly charred and the halloumi is golden brown and slightly softened. You can also roast the skewers in the oven at 400°F (200°C) for about 20 minutes, turning halfway through.

Serve

Remove the skewers from the grill or oven and serve immediately. Garnish with fresh herbs if desired.
