Ingredients
  • 1 can (8 oz) Refrigerated Crescent Roll Dough
  • 8 oz, cooked and sliced into 1/2-inch pieces Spicy Chorizo Sausage
  • 4 oz, shredded Cheddar Cheese
  • 1/2 cup Mayonnaise
  • 1 tablespoon, finely chopped (plus 1 tsp adobo sauce) Chipotle Peppers in Adobo Sauce
  • 1 teaspoon Lime Juice

Prepare the Chorizo

Cook the chorizo sausage according to package instructions (pan-fried, grilled, or baked). Let it cool slightly, then slice into 1/2-inch pieces. If the chorizo is already cooked, you can skip this step.

Make the Chipotle Mayo

In a small bowl, combine the mayonnaise, chopped chipotle pepper, adobo sauce, and lime juice. Mix well and set aside. Adjust the amount of chipotle to your preferred level of spiciness.

Assemble the Pigs in a Blanket

Preheat your oven to 375°F (190°C). Unroll the crescent roll dough and separate it into triangles. Sprinkle a small amount of shredded cheddar cheese onto each triangle. Place a piece of chorizo on the wider end of the triangle and roll it up towards the point. Pinch the seams to seal.

Baking Instructions

Place the assembled pigs in a blanket on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until golden brown. Let cool slightly before serving.

Serving Suggestions

Serve warm with the chipotle mayo dipping sauce. Garnish with chopped cilantro for added flavor and visual appeal.

FAQ

  • Can I use mild chorizo?

Yes, you can substitute spicy chorizo with mild chorizo if you prefer less heat. You may want to add a pinch of cayenne pepper to the chipotle mayo to compensate for the lack of spice.
  • Can I use pre-shredded cheese?

Yes, pre-shredded cheese works perfectly fine. However, freshly shredded cheese tends to melt more smoothly.
