Ingredients
 • 12 Rice paper wrappers
 • 1/2 lb Cooked shrimp, peeled and deveined
 • 4 oz Thin rice vermicelli noodles
 • 1/2 cup Fresh mint leaves
 • 1/2 cup Fresh cilantro leaves
 • 1/2 cup Shredded carrots
 • 1/2 cup Shredded lettuce
 • 1/2 Cucumber, thinly sliced
 • As needed Peanut dipping sauce

Prepare the Ingredients

Cook the rice vermicelli noodles according to package directions. Drain well and set aside to cool slightly. Prepare all vegetables by washing, drying, and shredding or slicing as indicated. Cook the shrimp until pink and cooked through.

Soften the Rice Paper

Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes pliable but not too soft. Be careful not to over soak it, as it will continue to soften as you work.

Assemble the Spring Roll

Lay the softened rice paper wrapper on a clean, flat surface. Place a small amount of rice vermicelli noodles in the center of the wrapper. Top with a few shrimp halves, a sprig of mint and cilantro, shredded carrots, shredded lettuce, and cucumber slices.

Roll the Spring Roll

Fold the sides of the wrapper inward over the filling. Then, starting from the bottom edge closest to you, tightly roll the wrapper up like a burrito. Repeat with the remaining rice paper wrappers and filling.

Serve

Serve the fresh spring rolls immediately with peanut dipping sauce. If not serving immediately, wrap each spring roll individually in plastic wrap to prevent them from drying out.
