Spicy Lentil Salad with Roasted Vegetables

Ingredients
- 1 cup Brown or Green Lentils
- 3 cups Water
- 1 medium Sweet Potato
- 2 medium Carrots
- 1/2 Red Onion
- 2 tablespoons Olive Oil
- 1-2 teaspoons Harissa Paste
- 1 tablespoon Lemon Juice
- 1 clove Garlic
- 1/4 cup Cilantro
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
Roasting the Vegetables
Preheat oven to 400°F (200°C). Peel and dice the sweet potato and carrots. Slice the red onion into wedges. Toss the vegetables with 1 tablespoon of olive oil, salt, and pepper. Spread them in a single layer on a baking sheet and roast for 30-35 minutes, or until tender and slightly caramelized.
Cooking the Lentils
While the vegetables are roasting, rinse the lentils thoroughly under cold water. Place the lentils in a saucepan with 3 cups of water. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the lentils are tender but still hold their shape. Drain any excess water.
Making the Dressing
In a small bowl, whisk together the remaining 1 tablespoon of olive oil, harissa paste, lemon juice, minced garlic, salt, and pepper. Adjust the amount of harissa paste to your preference for spiciness.
Assembling the Salad
In a large bowl, combine the cooked lentils, roasted vegetables, and chopped cilantro. Pour the dressing over the salad and toss gently to combine. Serve warm or at room temperature.
