Sweet Corn Fritters with Chipotle Aioli

Ingredients
- 2 cups Fresh Corn Kernels
- 1/2 cup All-Purpose Flour
- 1/4 cup Cornmeal
- 1 teaspoon Baking Powder
- 1 tablespoon Sugar
- 1/2 teaspoon Salt
- 1/4 teaspoon Black Pepper
- 1/2 cup Milk
- 1 Egg
- 2 tablespoons Chopped Chives
- For frying Vegetable Oil
- 1/2 cup Mayonnaise
- 1-2 Chipotle Peppers in Adobo Sauce
- 1 teaspoon Lime Juice
Making the Fritter Batter
In a large bowl, combine the corn kernels, flour, cornmeal, baking powder, sugar, salt, and pepper. Mix well to ensure all dry ingredients are evenly distributed.
Adding the Wet Ingredients
In a separate bowl, whisk together the milk and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Gently fold in the chopped chives.
Frying the Fritters
Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot, drop spoonfuls of the corn batter into the hot oil, being careful not to overcrowd the pan.
