- 8 cups Chicken Broth
- 1 lb Chicken Breast
- 8 oz Egg Noodles
- 2 medium, chopped Carrots
- 2 stalks, chopped Celery
- 1 medium, chopped Onion
- 2 cloves, minced Garlic
- 1 teaspoon Dried Thyme
- 1/2 teaspoon Dried Rosemary
- 1 Bay Leaf
- to taste Salt
- to taste Black Pepper
- 2 tablespoons, chopped Fresh Parsley
Prepare the Chicken
Place the chicken breast in a large pot or Dutch oven and cover with chicken broth. Add the bay leaf, thyme, and rosemary. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the chicken is cooked through. Remove the chicken from the pot and set aside to cool slightly.
Sauté the Vegetables
While the chicken is cooling, add the chopped carrots, celery, and onion to the pot. Sauté over medium heat for 5-7 minutes, or until the vegetables are softened. Add the minced garlic and cook for another minute until fragrant.
Shred the Chicken
Once the chicken is cool enough to handle, shred it with two forks. Discard the bay leaf from the pot.
Combine and Simmer
Add the shredded chicken back to the pot with the vegetables and broth. Bring to a simmer. Add the egg noodles and cook according to package directions, usually about 8-10 minutes, or until the noodles are tender. Be careful not to overcook the noodles.
Season and Serve
Season the soup with salt and pepper to taste. Stir in the chopped fresh parsley. Serve hot and enjoy!

Can I use a rotisserie chicken instead of cooking the chicken breast?
Yes, you can definitely use a rotisserie chicken. Just shred the meat and add it to the soup after sautéing the vegetables. This will save you some time. -
Can I freeze this soup?
Yes, chicken noodle soup freezes well. Allow the soup to cool completely before transferring it to freezer-safe containers. When ready to eat, thaw the soup overnight in the refrigerator and reheat on the stovetop. Keep in mind the noodles may become a little softer after freezing. -
Can I add other vegetables?
Absolutely! Feel free to add other vegetables like peas, green beans, or corn. Just add them along with the noodles so they cook through.
