  • 12 Store-bought empanada dough discs
  • 2 cups, shredded Cooked chicken breast
  • 1 cup, shredded Monterey Jack cheese
  • 1/2 cup, shredded Cheddar cheese
  • 1/2 medium, finely chopped Onion
  • 1 clove, minced Garlic
  • 1 tsp Chili powder
  • 1/2 tsp Cumin
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1 tbsp Olive oil
  • 1 , beaten (for egg wash) Egg

Preparing the Filling

Begin by preparing the chicken and cheese filling. Heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute, until fragrant. In a bowl, combine the shredded chicken, Monterey Jack cheese, cheddar cheese, sautéed onion and garlic, chili powder, cumin, salt, and pepper. Mix well to ensure all ingredients are evenly distributed. This flavorful mixture is the heart of our empanadas.

Assembling the Empanadas

Preheat your oven to 375°F (190°C). Take one empanada dough disc and place it on a clean surface. Spoon a generous amount of the chicken and cheese filling into the center of the disc. Fold the dough over to form a half-moon shape. Press the edges firmly together to seal. You can use a fork to crimp the edges for a decorative and secure seal. Repeat this process with the remaining dough discs and filling.

Baking the Empanadas
