Whipped Feta Tomato Bruschetta
A creamy and tangy bruschetta featuring whipped feta cheese, fresh tomatoes, basil, and a drizzle of honey. A delightful twist on a classic.
Ingredients
- 1 loaf Baguette
- 4 oz Feta Cheese
- 2 oz Cream Cheese
- 4 medium Ripe Tomatoes
- 1/4 cup Fresh Basil
- 1 clove Garlic
- 2 tablespoons Olive Oil
- 1 tablespoon Honey
- to taste Salt
- to taste Black Pepper
Whip the Feta Cheese
In a food processor or with an electric mixer, combine the crumbled feta cheese and softened cream cheese. Process or beat until smooth and creamy. This may take a few minutes, scraping down the sides as needed. Set aside the whipped feta mixture.
Prepare the Tomato Mixture
Dice the tomatoes into small, uniform pieces. Place the diced tomatoes in a medium-sized bowl. Add the minced garlic, chopped fresh basil, olive oil, salt, and black pepper to the bowl. Gently toss all the ingredients together to combine. Allow the tomato mixture to sit for at least 10 minutes to let the flavors meld.
Toast the Baguette Slices
Preheat your oven to 375°F (190°C). Slice the baguette into 1/2-inch thick slices. Arrange the baguette slices in a single layer on a baking sheet. Lightly brush each slice with olive oil. Bake the baguette slices for 5-7 minutes, or until they are lightly golden brown and crisp.
Assemble the Bruschetta
Once the baguette slices are toasted, remove them from the oven and let them cool slightly. Spread a generous layer of whipped feta cheese on each toasted baguette slice. Spoon the tomato mixture evenly over the whipped feta cheese. Drizzle a small amount of honey over the top of each bruschetta to add a touch of sweetness.
Serve Immediately
Serve the bruschetta immediately to enjoy the crispy baguette, creamy feta, and fresh tomato flavor. Garnish with a few extra basil leaves if desired. These bruschetta are best enjoyed fresh, so assemble them just before serving.
