Mediterranean Couscous Salad
A vibrant and refreshing couscous salad bursting with Mediterranean flavors. Perfect as a light lunch, side dish, or appetizer.
Ingredients
- 1 cup Couscous
- 1.25 cups Boiling Water
- 3 tablespoons Olive Oil
- 2 tablespoons Lemon Juice
- 1/2 cup, diced Cucumber
- 1 cup, halved Cherry Tomatoes
- 1/4 cup, finely diced Red Onion
- 1/2 cup, pitted and halved Kalamata Olives
- 1/2 cup, crumbled Feta Cheese
- 1/4 cup, chopped Fresh Parsley
- 2 tablespoons, chopped Fresh Mint
- to taste Salt
- to taste Black Pepper
Prepare the Couscous
Place the couscous in a heatproof bowl. Pour the boiling water over the couscous, cover with a lid or plastic wrap, and let it sit for 5 minutes until the water is absorbed. Fluff the couscous with a fork.
Make the Dressing
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Combine Ingredients
In a large bowl, combine the cooked couscous, cucumber, cherry tomatoes, red onion, Kalamata olives, feta cheese, parsley, and mint. Pour the dressing over the salad and toss gently to combine.
Chill and Serve
Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
