Roasted Bell Pepper and Feta Bites
These vibrant roasted bell pepper and feta bites are a delightful vegetarian appetizer. Sweet roasted peppers paired with salty feta create a burst of flavor in every bite.
Ingredients
- 2 Bell Peppers (red, yellow, orange)
- 4 ounces Feta Cheese
- 2 tablespoons Olive Oil
- 1 tablespoon, chopped Fresh Oregano
- 1 tablespoon Lemon Juice

- 1 Baguette slices (optional)
Preparing the Bell Peppers
Preheat your oven to 425°F (220°C). Wash the bell peppers and cut them into quarters, removing the seeds and membranes.
Roasting the Peppers
Place the bell pepper quarters skin-side up on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast for 15-20 minutes, or until the skins are blistered and slightly charred.
