  • 1 cup Rice noodles, cooked
  • 1/4 cup Peanut butter
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Sesame oil
  • 2-3 tablespoons Warm water
  • 1/4 teaspoon Optional: Red pepper flakes

Prepare the Peanut Dipping Sauce

In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey, and sesame oil. Add warm water, one tablespoon at a time, until the sauce reaches your desired consistency. Add red pepper flakes for a touch of heat, if desired. Set aside.

Prepare the Spring Roll Filling

In a large bowl, combine the shredded carrots, shredded cucumber, sliced red bell pepper, and cooked rice noodles. Mix lightly.

Assemble the Spring Rolls

Fill a shallow dish with warm water. Dip one spring roll wrapper into the water for a few seconds until it becomes pliable. Lay the wrapper on a flat surface. Place a small amount of the vegetable mixture, avocado slices, mint leaves, and cilantro leaves in the center of the wrapper. Fold the sides of the wrapper inward, then tightly roll from the bottom up. Repeat with the remaining wrappers and filling.
