Spicy Chorizo Baked Clams

Ingredients
- 24 Fresh Littleneck Clams
- 4 oz Chorizo Sausage (Spicy)
- 1/2 Red Bell Pepper
- 1/2 Green Bell Pepper
- 1/2 Onion
- 3 cloves Garlic
- 1 cup Breadcrumbs
- 2 tbsp Olive Oil
- 1/4 cup Fresh Parsley
- 1/4 tsp Red Pepper Flakes
- 1/4 cup White Wine
- to taste Salt
- to taste Black Pepper
Preparing the Clams
Thoroughly scrub the clams under cold running water. Discard any that are open and don't close when tapped.
Sautéing the Chorizo and Vegetables
Remove the chorizo from its casing and crumble it. Dice the red and green bell peppers and onion. Mince the garlic. In a skillet, heat olive oil over medium heat. Add the chorizo and cook until browned. Add the peppers, onion, and garlic and sauté until softened, about 5-7 minutes.
Adding Wine and Herbs
Pour in the white wine and simmer for a minute to deglaze the pan, scraping up any browned bits from the bottom. Stir in the fresh parsley and red pepper flakes. Season with salt and pepper to taste. Remove from heat and let cool slightly.
Mixing the Filling
In a bowl, combine the chorizo and vegetable mixture with the breadcrumbs. Mix well to combine.
Filling and Baking
Preheat your oven to 400°F (200°C). Arrange the clams in a baking dish. Spoon the chorizo mixture generously over each clam. Bake for 15-18 minutes, or until the clams are cooked through and the breadcrumbs are golden brown. Discard any clams that do not open.
Serving
Remove the baked clams from the oven and serve immediately while hot. Garnish with extra parsley if desired.
