  • 6 Large Portobello Mushrooms
  • 4 oz, crumbled Feta Cheese
  • 1/2 cup, pitted and chopped Kalamata Olives
  • 1/4 cup, oil-packed, drained and chopped Sun-Dried Tomatoes
  • 2 tablespoons, chopped Fresh Parsley
  • 1 tablespoon, chopped Fresh Oregano
  • 2 cloves, minced Garlic
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Prepare the Mushrooms

Preheat your oven to 400°F (200°C). Gently remove the stems from the portobello mushrooms. Clean the mushroom caps with a damp paper towel. Drizzle the mushroom caps with 1 tablespoon of olive oil and season with salt and pepper.
