Cream Cheese and Chorizo Stuffed Mushrooms

Ingredients
- 16 Large cremini mushrooms
- 4 oz Chorizo (removed from casing)
- 4 oz Cream cheese, softened
- 2 cloves Garlic, minced
- 2 Green onions, thinly sliced
- 1/2 cup Shredded cheddar cheese
- 1 tablespoon Olive oil
- to taste Salt and pepper
Prep the Mushrooms
Carefully remove the stems from the mushrooms. Gently wipe the mushroom caps clean with a damp paper towel. Drizzle a little olive oil inside each mushroom cap.
Cook the Chorizo
In a skillet over medium heat, cook the chorizo, breaking it apart with a spoon, until it's fully cooked and slightly browned. Drain off any excess grease.
Make the Filling
