Mediterranean Stuffed Bell Peppers with Feta
These Mediterranean-inspired stuffed bell peppers are filled with a flavorful mixture of orzo, sun-dried tomatoes, Kalamata olives, spinach, and feta cheese. A delicious and elegant vegetarian starter.
Ingredients
- 4 Bell peppers (red or yellow)
- 1.5 cups Orzo pasta, cooked
- 1/2 cup Sun-dried tomatoes, oil-packed, drained and chopped
- 1/4 cup Kalamata olives, pitted and chopped
- 2 cups Fresh spinach, chopped
- 1/2 cup Crumbled feta cheese
- 1/4 cup Pine nuts, toasted
- 2 cloves Garlic, minced
- 2 tablespoons Olive oil
- 1 teaspoon Dried oregano
- to taste Salt
- to taste Pepper
Prepare the Bell Peppers
Preheat oven to 375°F (190°C). Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the bell pepper halves in a baking dish.
Sauté the Garlic and Spinach
Heat olive oil in a skillet over medium heat. Add minced garlic and cook for about 1 minute, until fragrant. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat.
Make the Filling
In a large bowl, combine the cooked orzo, sautéed spinach and garlic, sun-dried tomatoes, Kalamata olives, feta cheese, toasted pine nuts, oregano, salt, and pepper. Mix well.
Stuff and Bake
Spoon the orzo mixture into each bell pepper half, filling them generously. Pour about 1/2 inch of water into the bottom of the baking dish. Bake for 25-30 minutes, or until the bell peppers are tender.
Serve
Remove from the oven and let cool slightly before serving. Garnish with extra feta cheese or a drizzle of olive oil (optional).
