  • 12 Medjool Dates
  • 4 oz Spicy Chorizo
  • 6 slices Bacon
  • 2 oz Goat Cheese (optional)

Prepare the Dates

Carefully make a slit lengthwise in each Medjool date and remove the pit. Do not cut the date completely in half. If using goat cheese, stuff a small amount (about 1/4 teaspoon) into each date.

Prepare the Chorizo

Remove the chorizo from its casing and crumble it into a skillet. Cook over medium heat until browned, about 5-7 minutes. Drain off any excess grease. Let cool slightly.

Stuff the Dates

Spoon a small amount of cooked chorizo into each pitted date. Press lightly to secure the filling.

Wrap in Bacon

Cut each bacon slice in half. Wrap one half-slice of bacon around each stuffed date, securing with a toothpick if necessary. Ensure the bacon is snug to the date so it crisps up nicely.

Bake the Dates

Preheat oven to 375°F (190°C). Place the bacon-wrapped dates on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the bacon is crispy and the dates are heated through. Keep a close eye to prevent burning.

Serve

Remove from oven and let cool slightly before serving. Remove toothpicks before serving, if used. These are best served warm.
