Dairy-Free Lemon Herb Baked Cod with Roasted Vegetables

- 4 Cod fillets

- 1 cup Broccoli florets

Preheat oven to 400°F (200°C). Toss the broccoli florets, carrots, bell pepper, and red onion with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Spread in a single layer.
Prepare the Cod
In a small bowl, combine the remaining 1 tablespoon of olive oil, lemon juice (from half a lemon), thyme, rosemary, garlic, salt, and pepper.
Bake the Vegetables

Add the Cod
