Paleo Coconut Milk Ice Cream with Berry Swirl
A creamy and delicious Paleo-friendly ice cream made with coconut milk and a vibrant berry swirl. Perfect for a healthy and refreshing dessert.
Ingredients
- 2 cans (13.5 oz each) Full-fat coconut milk
- 1/2 cup Raw honey
- 1 teaspoon Vanilla extract
- 1 cup Mixed berries (fresh or frozen)
- 1 tablespoon Lemon juice
Making the Berry Swirl
In a small saucepan, combine the mixed berries and lemon juice. Cook over medium heat, stirring occasionally, until the berries soften and release their juices (about 10 minutes). Use a fork or immersion blender to mash the berries into a slightly chunky sauce. Let the berry swirl cool completely.
Preparing the Coconut Milk Base
In a blender or food processor, combine the full-fat coconut milk, raw honey, and vanilla extract. Blend until smooth and creamy. Taste and adjust the sweetness if needed.
Churning the Ice Cream
Pour the coconut milk mixture into an ice cream maker and churn according to the manufacturer's instructions. This usually takes around 20-25 minutes.
Creating the Swirl and Freezing
Once the ice cream is churned, transfer half of it to a freezer-safe container. Drizzle half of the cooled berry swirl over the ice cream. Spoon the remaining ice cream over the berry swirl, and then drizzle the remaining berry swirl on top. Use a knife or spoon to gently swirl the berry sauce into the ice cream. Be careful not to overmix.
Freezing and Serving
Cover the container and freeze for at least 4 hours, or preferably overnight, to allow the ice cream to fully harden. Let the ice cream soften slightly at room temperature for 5-10 minutes before serving. Enjoy!

Important Considerations for Nutrition
This recipe uses raw honey as a sweetener, which is a natural option but should still be consumed in moderation. Consider using other Paleo-friendly sweeteners like maple syrup or dates if preferred. Adjust the amount of sweetener to your taste preferences. Coconut milk is high in saturated fat, so individuals with specific dietary restrictions should be mindful of portion sizes.
FAQ
-
Can I use frozen berries instead of fresh?
Yes, frozen berries work perfectly well in this recipe. Just make sure to thaw them slightly before cooking them down into the berry swirl. -
My ice cream is too hard after freezing. What can I do?
Coconut milk-based ice cream can sometimes freeze quite hard. Allow it to soften at room temperature for 10-15 minutes before scooping. You can also try adding a tablespoon or two of vodka to the coconut milk mixture before churning; the alcohol will help prevent the ice cream from becoming too icy. -
Can I use a different type of fruit for the swirl?
Absolutely! Feel free to experiment with other Paleo-friendly fruits like peaches, mangoes, or cherries. Adjust the cooking time as needed based on the fruit you choose.
