A delicious and protein-packed vegan burger recipe featuring amaranth, black beans, and a blend of spices. Perfect for a healthy and satisfying meal.
Ingredients
- 1 cup Amaranth
- 2 cups Water
- 1.5 cups Black beans, cooked
- 1/2 Onion, chopped
- 1/2 Red bell pepper, chopped
- 2 cloves Garlic, minced
- 1/2 cup Oat flour
- 1 teaspoon Chili powder
- 1/2 teaspoon Cumin
- 1/4 teaspoon Smoked paprika
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
- 2 tablespoons Olive oil
Cooking the Amaranth
1.
Rinse the amaranth under cold water. In a medium saucepan, combine the amaranth and water. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the water is absorbed and the amaranth is cooked through. Fluff with a fork and set aside to cool slightly.
Preparing the Burger Mixture
2.
In a large bowl, mash the cooked black beans with a fork. Add the cooled amaranth, chopped onion, red bell pepper, minced garlic, oat flour, chili powder, cumin, smoked paprika, salt, and pepper. Mix well until all ingredients are combined.
Forming the Burgers
3.
Divide the mixture into 4 equal portions and form each portion into a burger patty. If the mixture is too sticky, add more oat flour, one tablespoon at a time.
Cooking the Burgers
4.
Heat the olive oil in a large skillet over medium heat. Carefully place the burger patties in the skillet and cook for 5-7 minutes per side, or until golden brown and heated through.
Serving
5.
Serve the amaranth and black bean burgers on buns with your favorite toppings, such as lettuce, tomato, avocado, and vegan mayonnaise.
