Ingredients
- 150 g Chicken Breast, boneless, skinless
- 1 cup Broccoli Florets
- 1/2 Red Bell Pepper, sliced
- 1/2 cup Carrots, sliced
- 1/4 Onion, sliced
- 1 tbsp Low Sodium Soy Sauce
- 1 tsp Olive Oil
- 1 clove Garlic, minced
- 1/2 tsp Ginger, grated
- 1 tsp Cornstarch
- 2 tbsp Water
- 1/2 tsp Sesame Seeds (optional)
Prepare the Chicken
Cut the chicken breast into small, bite-sized pieces. In a small bowl, mix the chicken with 1/2 tablespoon of low sodium soy sauce and set aside for at least 10 minutes to marinate.
Prepare the Sauce
In another small bowl, whisk together the remaining 1/2 tablespoon of low sodium soy sauce, cornstarch, and water. Set aside.
Sauté Vegetables
Heat the olive oil in a large skillet or wok over medium-high heat. Add the onion and sauté for about 2 minutes, until translucent. Add the garlic and ginger and cook for another minute, until fragrant.
Cook the Chicken
Add the marinated chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
Add Vegetables and Sauce
Add the broccoli florets, red bell pepper, and carrots to the skillet. Stir-fry for about 5 minutes, until the vegetables are tender-crisp. Pour the sauce over the chicken and vegetables. Cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
Serve
Serve the stir-fry immediately. Garnish with sesame seeds, if desired. Serve with a small portion of white rice or quinoa for a complete meal (adjust portion size according to individual dietary needs).
