Low-Carb Zucchini Noodles with Pesto and Cherry Tomatoes
A light and refreshing low-carb dinner featuring zucchini noodles tossed in vibrant pesto and sweet cherry tomatoes. A quick and easy meal packed with flavor.
Ingredients
- 4 medium Zucchini
- 1 pint Cherry tomatoes, halved
- 1/2 cup Pesto (store-bought or homemade)
- 1 tablespoon Olive oil
- 2 tablespoons Pine nuts, toasted (optional)
- to taste Salt
- to taste Black pepper
- 2 tablespoons Parmesan cheese, grated (optional)
Prepare the Zucchini Noodles
Use a spiralizer or vegetable peeler to create zucchini noodles (zoodles). If using a vegetable peeler, peel the zucchini into wide ribbons and then cut the ribbons into noodle-like strands.
Cook the Cherry Tomatoes
Heat olive oil in a large skillet over medium heat. Add the halved cherry tomatoes and cook for 5-7 minutes, or until they soften slightly and release their juices.
Combine Ingredients
Add the zucchini noodles to the skillet with the cherry tomatoes. Cook for 1-2 minutes, just until the noodles are slightly tender but still have a bite. Be careful not to overcook, as they can become watery.
Add Pesto
Remove the skillet from the heat and stir in the pesto. Toss gently to coat the noodles evenly.
Serve
Divide the zucchini noodles between serving bowls. Garnish with toasted pine nuts and grated Parmesan cheese, if desired. Season with salt and pepper to taste. Serve immediately.
