Creamy Pesto Chicken with Zucchini Noodles
A flavorful and satisfying low-carb dinner featuring juicy chicken breasts coated in a creamy pesto sauce, served over a bed of fresh zucchini noodles. This dish is quick to prepare and packed with flavor.
Ingredients
- 2 Chicken Breasts, boneless and skinless
- 3 medium Zucchini
- 1/4 cup Pesto
- 1/4 cup Heavy Cream
- 1 tbsp Olive Oil
- 2 cloves Garlic, minced
- 2 tbsp Grated Parmesan Cheese
- to taste Salt and Pepper
Prepare the Zucchini Noodles
Using a spiralizer or vegetable peeler, create zucchini noodles (zoodles) from the zucchini. If using a spiralizer, follow the manufacturer's instructions. If using a peeler, create thin, wide noodles.
Cook the Chicken
Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and cook for 6-8 minutes per side, or until cooked through and golden brown.
Make the Creamy Pesto Sauce
Remove the chicken from the skillet and set aside. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant. Stir in the pesto and heavy cream.
Bring the sauce to a simmer and cook for 2-3 minutes, or until slightly thickened. Stir in the Parmesan cheese.
Add the Zucchini Noodles
Add the zoodles to the skillet and toss to coat with the creamy pesto sauce. Cook for 2-3 minutes, or until the zoodles are tender-crisp. Be careful not to overcook them.
Serve
Slice the chicken breasts and place them on top of the zoodles. Spoon any remaining sauce over the chicken and zoodles. Serve immediately. Enjoy!
