Ingredients
- 4 Cod fillets
- 1 pound Asparagus spears
- 2 tablespoons Olive oil
- 1 Lemon
- 2 cloves Garlic
- 1 teaspoon Dried oregano
- 1 teaspoon Dried basil
- 1/2 teaspoon Salt
- 1/4 teaspoon Black pepper
Preparation
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Preparing the Asparagus
Snap off the tough ends of the asparagus. Toss the asparagus with 1 tablespoon of olive oil, salt, and pepper.
Seasoning the Cod
In a small bowl, combine the remaining 1 tablespoon of olive oil, minced garlic, oregano, basil, salt, and pepper. Zest the lemon and add the zest to the bowl. Squeeze the juice of half the lemon into the bowl. Mix well.
Baking
Place the asparagus on one side of the prepared baking sheet. Place the cod fillets on the other side. Spoon the lemon herb mixture over the cod fillets, ensuring they are evenly coated. Slice the remaining half of the lemon and place a slice on top of each cod fillet. Bake for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork and the asparagus is tender-crisp.
Serve immediately. You can garnish with fresh parsley or a lemon wedge, if desired.
