Tropical Water Kefir
A delicious water kefir recipe infused with the flavors of pineapple and coconut, creating a probiotic drink with a tropical twist.
Ingredients
- 2 tablespoons Water Kefir Grains
- 1 liter Filtered Water
- 1/4 cup Organic Cane Sugar
- 1/2 cup Pineapple Chunks (fresh or frozen)
- 2 tablespoons Unsweetened Shredded Coconut
First Fermentation
Prepare the Sugar Water: Dissolve the organic cane sugar in the filtered water, stirring until completely dissolved. Ensure the water is at room temperature before adding the sugar. Avoid using chlorinated tap water.
Add Pineapple and Coconut: Place the pineapple chunks and shredded coconut into a clean glass jar (approximately 1 liter capacity).
Add Sugar Water: Pour the sugar water mixture into the jar, leaving about an inch of headspace at the top.
Add Kefir Grains: Gently add the water kefir grains to the jar.
Fermentation: Cover the jar with a breathable cloth or coffee filter secured with a rubber band. Place the jar in a dark, room-temperature location (ideally between 68-78°F or 20-26°C) for 24-48 hours. Monitor the fermentation progress and adjust accordingly based on the ambient temperature.
Second Fermentation (Optional)
Strain the Kefir: After the first fermentation, strain the water kefir through a plastic strainer into a clean glass bottle or jar. Discard the used pineapple and coconut.
Preserve the Grains: Set aside the water kefir grains with some of the finished kefir for your next batch.
Add Additional Flavor (Optional): You can add a splash of pineapple juice or a few more pieces of fresh pineapple to the strained kefir for a stronger flavor.
Bottle and Ferment: Seal the bottle tightly and let it ferment at room temperature for another 12-24 hours for increased carbonation and enhanced flavor. Use caution during the second fermentation to avoid excessive pressure build-up.
Refrigerate: After the second fermentation, refrigerate the kefir to slow down the fermentation process and prevent over-carbonation. Consume within a week for optimal flavor and freshness.
Nutrition Facts (Estimated per 100g)
Please note that the nutrition facts are approximate and can vary based on the fermentation process and the ingredients used.
Calories: Approximately 25-35 kcal
Carbohydrates: 6-8g (mainly from residual sugars and fruit)
Sugar: Varies depending on fermentation time
Probiotics: Varies depending on fermentation
Other Important Considerations for Nutrition
Sugar Consumption: The water kefir grains consume the sugar during fermentation, resulting in a lower sugar content in the final product. Nevertheless, some residual sugar will remain. Consider longer fermentation times if you're mindful of sugar intake.
Probiotic Content: Water kefir is a good source of beneficial bacteria and yeasts, which can have a positive impact on gut health. Specific strains and their concentrations will vary.
Digestive Tolerance: As with all fermented foods, it's recommended to start with small portions to assess individual tolerance. Some people might experience mild digestive discomfort initially. Slowly increase intake as tolerated.
FAQ
-
Can I use canned pineapple instead of fresh?
While fresh pineapple is preferable, you can use canned pineapple. Ensure it's packed in its own juice and not in heavy syrup. Drain the pineapple well before adding it to the kefir. -
How do I know when the kefir is ready?
The water kefir is ready when it has a slightly tart and less sweet taste compared to the sugar water you started with. Taste it after 24 hours and continue to ferment longer if needed. The fermentation time depends on room temperature. -
My water kefir is not fizzy enough. What can I do?
The fizziness of water kefir is enhanced during the second fermentation. Make sure to seal the bottle tightly during this stage to trap the carbon dioxide. You can also add a small amount of sugar or fruit juice to the second fermentation to promote more carbonation. -
Can I use other fruits for flavoring?
Yes, you can experiment with other fruits like mango, berries, or citrus fruits for flavoring your water kefir. Use about 1/2 cup of chopped fruit or 1/4 cup of juice per liter of kefir.
