Ingredients
  • 8 oz Tempeh
  • 2 tbsp Low Sodium Tamari
  • 1 tsp Liquid Smoke
  • 1 tbsp Olive Oil
  • 4 slices Rye Bread
  • 1 cup Sauerkraut
  • 4 tbsp Vegan Russian Dressing
  • 4 slices Vegan Swiss Cheese (or dairy Swiss)

Prepare the Tempeh

Slice the tempeh into thin slices, about 1/4 inch thick. In a shallow dish, whisk together the tamari and liquid smoke. Marinate the tempeh slices in the mixture for at least 10 minutes, or up to 30 minutes for a stronger smoky flavor.

Cook the Tempeh

Heat the olive oil in a large skillet over medium heat. Add the marinated tempeh and cook for 3-4 minutes per side, or until golden brown and slightly crispy.

Assemble the Sandwiches

Spread vegan Russian dressing on each slice of rye bread. On two slices of bread, layer sauerkraut, the cooked smoky tempeh, and vegan Swiss cheese (or dairy Swiss). Top with the remaining slices of bread.

Grill the Sandwiches (Optional)

For a warm, melty sandwich, you can grill it like a grilled cheese. Spread butter (vegan or dairy) on the outside of each slice of bread. Cook in a skillet over medium heat for 2-3 minutes per side, or until golden brown and the cheese is melted. Alternatively, you can bake the assembled sandwiches in a preheated oven at 350°F (175°C) for 10-15 minutes.

Serve

Cut the sandwiches in half and serve immediately. Enjoy!

Important Considerations for Nutrition

Consider using low-sodium sauerkraut and tamari to reduce sodium intake. The Russian dressing and cheese (dairy or vegan) can be high in fat, so use them in moderation. This sandwich provides a good source of plant-based protein and fiber.
