Ingredients
  • 200 g Rice Noodles (thin)
  • 400 g Shrimp
  • 4 cloves Garlic
  • 1/4 cup Olive Oil
  • 1/4 cup Dry White Wine
  • 2 tablespoons Lemon Juice
  • 2 tablespoons Butter
  • 1/4 cup Fresh Parsley
  • 1/4 teaspoon Red Pepper Flakes
  • to taste Salt
  • to taste Black Pepper

Cook the Rice Noodles

Cook the rice noodles according to package directions. Drain well and set aside.

Prepare the Shrimp Scampi

Heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using) and cook for about 30 seconds, until fragrant. Be careful not to burn the garlic.

Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove the shrimp from the skillet and set aside.

Pour the white wine into the skillet and bring to a simmer, scraping up any browned bits from the bottom of the pan. Cook for 2-3 minutes, until the wine has reduced slightly.

Stir in the lemon juice and butter (or dairy-free alternative). Season with salt and pepper to taste.

Combine and Serve

Add the cooked rice noodles and shrimp back to the skillet. Toss to coat everything in the scampi sauce. Stir in the fresh parsley. Serve immediately.

Other Important Considerations for Nutrition

This recipe is gluten-free due to the use of rice noodles. Shrimp is a great source of protein and low in carbohydrates. Consider adding vegetables like zucchini or bell peppers for added nutrients. For a lower-sodium option, reduce or omit the salt and use low-sodium broth instead of wine.
