Spicy Peanut Marinated Tempeh Skewers

Ingredients
- 200 g Tempeh
- 2 tbsp Peanut Butter
- 2 tbsp Soy Sauce (low sodium)
- 1 tbsp Rice Vinegar
- 1 tbsp Maple Syrup
- 1-2 tsp (or to taste) Sriracha Sauce
- 1 tbsp Lime Juice
- 1 clove, minced Garlic
- 1/2 tsp, grated Ginger
- 8 Wooden Skewers
Prepare the Tempeh
Steam the tempeh for 10 minutes to soften it. Let it cool slightly, then cut it into bite-sized cubes, about 1-inch in size.
Make the Peanut Marinade
In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, maple syrup, sriracha sauce, lime juice, minced garlic, and grated ginger until well combined. Add a little water if the marinade is too thick.
Marinate the Tempeh
Place the tempeh cubes in a resealable bag or container. Pour the peanut marinade over the tempeh, ensuring all pieces are coated. Marinate in the refrigerator for at least 30 minutes, or up to several hours for a more intense flavor. Soaking the wooden skewers in water is highly recommended to prevent burning during grilling.
Assemble the Skewers

Alternatively, you can bake the skewers in a preheated oven at 190°C (375°F) for 15-20 minutes, flipping halfway through.
