  • 1 medium, chopped Yellow Onion
  • 2 medium, chopped Carrots
  • 2 stalks, chopped Celery
  • 3 cloves, minced Garlic
  • 1 cup, rinsed Green or Brown Lentils
  • 6 cups Vegetable Broth
  • 14.5 ounces, canned Diced Tomatoes
  • 1 teaspoon Dried Thyme
  • 1 Bay Leaf
  • to taste Salt
  • to taste Black Pepper
  • 1 tablespoon Lemon Juice
  • for garnish Fresh Parsley

Sauté the Vegetables

Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion, carrots, and celery and cook until softened, about 8 minutes. Add minced garlic and cook for another minute until fragrant.

Add Lentils, Broth, and Tomatoes

Stir in rinsed lentils, vegetable broth, diced tomatoes, dried thyme, and bay leaf. Season with salt and pepper to taste.

Simmer the Soup

Bring the soup to a simmer, then reduce heat to low and cover. Cook for 30-40 minutes, or until the lentils are tender.

Remove Bay Leaf and Season

Remove the bay leaf from the soup. Stir in lemon juice. Taste and adjust seasoning as needed.

Serve

Ladle the lentil soup into bowls and garnish with fresh parsley. Serve hot.
