Red Lentil Curry
A quick, easy, and nutritious vegan red lentil curry packed with flavor and protein. Perfect for a weeknight dinner when you're short on time. Ready in under 45 minutes!
Ingredients
- 1 cup, rinsed Red Lentils
- 1 can (13.5 oz), full-fat Coconut Milk
- 1 medium, chopped Onion
- 2 cloves, minced Garlic
- 1 inch piece, grated Ginger
- 1 tablespoon Tomato Paste
- 1 can (14.5 oz), undrained Diced Tomatoes
- 2 cups Vegetable Broth
- 1.5 tablespoons Curry Powder
- 1/2 teaspoon Turmeric Powder
- 1/2 teaspoon Cumin
- 1/2 teaspoon Coriander
- 1/4 teaspoon (optional) Cayenne Pepper
- to taste Salt
- to taste Pepper
- 2 tablespoons, chopped, for garnish Fresh Cilantro
- 1 tablespoon Lime Juice
- 2 tablespoons Vegetable Oil
Sauté Aromatics
Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and grated ginger; cook for another minute until fragrant.
Add Spices
Stir in the tomato paste, curry powder, turmeric powder, cumin, coriander, and cayenne pepper (if using). Cook for 1-2 minutes, stirring constantly, until fragrant.
Combine Ingredients
Add rinsed red lentils, diced tomatoes (undrained), and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender and the curry has thickened.
Finish with Coconut Milk & Lime
Stir in the coconut milk and lime juice. Heat through, but do not boil. Season with salt and pepper to taste.
Serve
Garnish with fresh cilantro and serve hot over rice or with naan bread.
