Peanut Satay Tofu Skewers
Delicious and protein-packed peanut satay tofu skewers, perfect for grilling or baking. These skewers are marinated in a flavorful peanut satay sauce and offer a great plant-based alternative to traditional satay. Serve them as an appetizer or as a main course with rice and a side salad.
Ingredients
- 1 block (14-16 oz) Extra-firm tofu
- 8-10 Wooden skewers
- 1/4 cup Peanut butter
- 2 tablespoons Soy sauce (or tamari for gluten-free)
- 1 tablespoon Lime juice
- 1 tablespoon Maple syrup (or agave)
- 2 cloves, minced Garlic
- 1 teaspoon, minced Ginger
- 1/4 teaspoon Red pepper flakes
- 2-3 tablespoons Water
Prepare the Tofu
Press the tofu to remove excess water. Wrap the tofu in paper towels and place a heavy object on top for at least 30 minutes. After pressing, cut the tofu into 1-inch cubes.
Make the Peanut Satay Marinade
In a bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, minced garlic, minced ginger, and red pepper flakes. Add water, one tablespoon at a time, until the sauce reaches a desired consistency (it should be thick but pourable).
Marinate the Tofu
Place the tofu cubes in a shallow dish or resealable bag. Pour the peanut satay marinade over the tofu, ensuring that all pieces are coated. Marinate for at least 30 minutes, or up to several hours in the refrigerator.
Assemble the Skewers
Thread the marinated tofu cubes onto the soaked wooden skewers.
Grill or Bake the Skewers
Grilling: Preheat grill to medium heat. Grill the skewers for about 5-7 minutes per side, or until the tofu is heated through and the marinade is slightly caramelized. Baking: Preheat oven to 375°F (190°C). Place the skewers on a baking sheet lined with parchment paper. Bake for 15-20 minutes, flipping halfway through, until heated through and slightly browned.
Serve
Serve the peanut satay tofu skewers warm with rice, a side salad, or your favorite dipping sauce.
