A comforting and hearty low-carb shepherd's pie featuring a savory beef filling topped with creamy cauliflower mash. This recipe is a perfect alternative to traditional shepherd's pie while keeping the carbs in check.
Ingredients
- 1 lb Ground beef
- 1 large head Cauliflower florets
- 1 Onion, chopped
- 1/2 cup Carrots, chopped
- 1/2 cup Celery, chopped
- 1 cup Beef broth
- 2 tablespoons Tomato paste
- 1 tablespoon Worcestershire sauce
- 2 cloves Garlic, minced
- 1 teaspoon Thyme, dried
- 2 tablespoons Butter
- 1/4 cup Heavy cream
- 1/4 cup Shredded cheddar cheese (optional)
- 1 tablespoon Olive oil
- To taste Salt and pepper
Prepare the Cauliflower Mash
Steam or boil the cauliflower florets until very tender, about 15-20 minutes. Drain well. In a food processor or blender, combine the cooked cauliflower, butter, and heavy cream. Blend until smooth and creamy. Season with salt and pepper to taste. Set aside.
Make the Beef Filling
In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Sauté the Vegetables
Add the chopped onion, carrots, and celery to the skillet with the browned beef. Cook until the vegetables are softened, about 5-7 minutes. Add the minced garlic and thyme, and cook for another minute until fragrant.
Add the Sauce
Stir in the tomato paste and Worcestershire sauce. Cook for 1 minute. Pour in the beef broth and bring to a simmer. Reduce the heat and let simmer for 15-20 minutes, or until the sauce has thickened slightly.
Assemble and Bake
Preheat oven to 375°F (190°C). Transfer the beef filling to a baking dish. Spread the cauliflower mash evenly over the beef filling. If desired, sprinkle shredded cheddar cheese over the top.
Bake the Pie
Bake in the preheated oven for 20-25 minutes, or until the cauliflower mash is golden brown and the filling is bubbly. Let cool slightly before serving.
