Whole30 Lemon Herb Roasted Chicken

Ingredients
- 1 Whole Chicken (about 3-4 lbs)
- 1 Lemon
- 2 tablespoons, chopped Fresh Rosemary
- 2 tablespoons, chopped Fresh Thyme
- 4 cloves, minced Garlic
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 medium, quartered Onion
- 2 medium, chopped Carrots
- 2 stalks, chopped Celery
Prepare the Chicken
Preheat oven to 400°F (200°C). Rinse the chicken inside and out and pat it dry with paper towels. This helps the skin crisp up. Make sure the chicken cavity is empty.
Make the Herb Mixture
In a small bowl, combine the chopped rosemary, thyme, minced garlic, olive oil, salt, and pepper. Mix well to form a paste.
Season the Chicken
Rub the herb mixture all over the chicken, including under the skin of the breast. This will ensure the chicken is flavorful throughout. Cut the lemon in half. Squeeze half the lemon juice over the chicken, then place both lemon halves inside the chicken cavity.
