Paleo Shepherd's Pie with Cauliflower Mash
A comforting and healthy twist on classic shepherd's pie, using a flavorful ground beef filling and topped with creamy cauliflower mash. This Paleo-friendly version is gluten-free and dairy-free.
Ingredients
- 1 lb Ground beef
- 1 large head Cauliflower
- 1 medium Onion
- 2 medium Carrots
- 2 stalks Celery
- 2 cloves Garlic
- 2 tablespoons Tomato paste
- 1 cup Beef broth
- 1 tablespoon Coconut aminos
- 1 teaspoon Dried thyme
- 1/2 teaspoon Dried rosemary
- 2 tablespoons Olive oil
- to taste Sea salt
- to taste Black pepper
- 2 tablespoons Nutritional Yeast
Prepare the Cauliflower Mash
Steam the cauliflower florets until tender, about 15-20 minutes. Drain well and transfer to a food processor or blender. Add nutritional yeast (if using), salt, and pepper. Blend until smooth and creamy. You may need to add a little water or beef broth to achieve the desired consistency.
Sauté the Vegetables
Heat olive oil in a large skillet or Dutch oven over medium heat. Add the chopped onion, carrots, and celery and sauté until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
Brown the Beef
Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
Add Flavor
Stir in the tomato paste, beef broth, coconut aminos, dried thyme, and dried rosemary. Season with salt and pepper to taste. Bring to a simmer and cook for 15-20 minutes, allowing the flavors to meld.
Assemble and Bake
Preheat oven to 375°F (190°C). Transfer the beef mixture to a 9x13 inch baking dish. Spread the cauliflower mash evenly over the top of the beef mixture.
Bake
Bake for 20-25 minutes, or until the cauliflower mash is lightly browned and the filling is bubbly.
Serve
Let the Paleo shepherd's pie cool for a few minutes before serving. Garnish with fresh herbs, if desired.
