Paleo Pan-Seared Salmon with Asparagus and Lemon-Garlic Ghee
Enjoy a delicious and healthy Paleo dinner with this pan-seared salmon recipe. The asparagus provides essential nutrients, and the lemon-garlic ghee adds a burst of flavor.
Ingredients
- 2 Salmon fillets, skin on or off
- 1 bunch Asparagus spears
- 2 tablespoons Ghee
- 2 cloves Garlic, minced
- 1 tablespoon Lemon juice
- to taste Sea salt
- to taste Black pepper
Preparation
Preheat your oven to 400°F (200°C). Prepare the asparagus by trimming the tough ends. Pat the salmon fillets dry with paper towels and season with sea salt and black pepper.
Cooking the Asparagus
Toss the asparagus spears with 1 tablespoon of ghee, sea salt, and black pepper. Spread them in a single layer on a baking sheet and roast for 8-10 minutes, or until tender-crisp.
Pan-Searing the Salmon
While the asparagus is roasting, heat the remaining 1 tablespoon of ghee in a skillet over medium-high heat. Place the salmon fillets skin-side down (if using skin-on) in the hot skillet and sear for 4-5 minutes, or until the skin is crispy and golden brown. Flip the fillets and cook for another 3-4 minutes, or until the salmon is cooked through and flakes easily with a fork.
Lemon-Garlic Ghee Sauce
In the last minute of cooking the salmon, add the minced garlic to the skillet and cook until fragrant, about 30 seconds. Stir in the lemon juice.
Serving
Serve the pan-seared salmon immediately over a bed of roasted asparagus. Drizzle the lemon-garlic ghee sauce over the salmon and asparagus. Enjoy!
