Prepare the Bell Peppers

Preheat your oven to 375°F (190°C). Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place the pepper halves cut-side up in a baking dish.

Cook the Meat Filling

Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Stuff the Peppers

Spoon the meat mixture into the bell pepper halves, filling them generously.

Bake

Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for another 10 minutes, or until the peppers are tender.

Serve

Garnish with fresh cilantro, if desired, and serve immediately.
