Paleo Shrimp Scampi with Zucchini Noodles
A light and flavorful Paleo dinner that replaces traditional pasta with zucchini noodles. This shrimp scampi is quick to prepare and packed with flavor.
Ingredients
- 1 pound Large shrimp, peeled and deveined
- 2 medium Zucchini
- 2 tablespoons Ghee or olive oil
- 4 cloves Garlic, minced
- 2 tablespoons Lemon juice
- 1/4 cup Dry white wine (optional)
- 1/4 teaspoon Red pepper flakes
- 2 tablespoons Fresh parsley, chopped
- to taste Sea salt
- to taste Black pepper
Preparation
Prepare the zucchini noodles using a spiralizer or julienne peeler. Pat the shrimp dry with paper towels and season with sea salt and black pepper. Mince the garlic and chop the parsley.
Cooking the Shrimp
Heat the ghee or olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, and cook until fragrant, about 30 seconds. Add the shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. If using, pour in the white wine and let it simmer for 1 minute.
Adding the Zucchini Noodles
Add the zucchini noodles to the skillet and toss with the shrimp and garlic sauce. Cook for 2-3 minutes, or until the zucchini noodles are tender-crisp. Be careful not to overcook the zucchini noodles, as they can become mushy.
Finishing Touches
Stir in the lemon juice and chopped parsley. Season with sea salt and black pepper to taste.
Serving
Serve the shrimp scampi with zucchini noodles immediately. Garnish with extra parsley and a squeeze of lemon juice if desired. Enjoy!
