Ingredients
  • 1 ½ cups Black beans, canned, rinsed and drained
  • 1 cup Cooked corn kernels
  • ½ cup Red onion, finely chopped
  • ½ cup Red bell pepper, finely chopped
  • ½ cup Rolled oats
  • 1-2 Chipotle pepper in adobo sauce, minced
  • 1 tablespoon Adobo sauce from chipotle peppers
  • 1 teaspoon Cumin
  • ½ teaspoon Garlic powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • ½ cup Vegan mayonnaise
  • 1 tablespoon Lime juice
  • 4 Burger buns
  • As needed Toppings of your choice (lettuce, tomato, avocado, etc.)

Preparing the Black Bean Mixture

In a large bowl, mash the black beans with a fork or potato masher until mostly smooth but still slightly chunky. Add the cooked corn, red onion, red bell pepper, rolled oats, minced chipotle pepper, adobo sauce, cumin, garlic powder, salt, and black pepper. Mix well to combine all the ingredients.

Forming the Burgers

Divide the black bean mixture into 4 equal portions. Shape each portion into a patty, about ¾ inch thick. If the mixture is too wet, add a little more rolled oats. If the mixture is too dry, add a tablespoon of water at a time.

Cooking the Burgers

Heat a lightly oiled skillet or grill pan over medium heat. Cook the burgers for 5-7 minutes per side, or until heated through and lightly browned. Alternatively, you can bake the burgers in a preheated oven at 375°F (190°C) for 20-25 minutes, flipping halfway through.

Making the Chipotle Mayo

In a small bowl, whisk together the vegan mayonnaise, minced chipotle pepper (optional, for extra heat), adobo sauce, and lime juice until smooth.

Assembling the Burgers

Toast the burger buns if desired. Spread the chipotle mayo on the top and bottom buns. Place a black bean burger on the bottom bun, add your favorite toppings (lettuce, tomato, avocado, etc.), and top with the other half of the bun. Serve immediately.

Other Important Considerations for Nutrition

This recipe is naturally high in fiber due to the black beans and oats, contributing to digestive health. Using whole-wheat buns can further increase fiber content. The chipotle peppers provide a source of capsaicin, which may have anti-inflammatory properties. Adjust the amount of chipotle pepper based on your spice preference. Be mindful of sodium content, especially when using canned beans. Rinsing the beans thoroughly can help reduce sodium. Serve with a variety of colorful vegetables for a balanced meal rich in vitamins and minerals.
