Ingredients
  • 2 medium Zucchini
  • 1 cup shredded Cooked chicken breast
  • 4 cups Chicken broth
  • 1/2 Carrot
  • 1/2 stalk Celery
  • 1/4 Onion
  • 1 clove Garlic
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 2 tablespoons chopped Fresh parsley (optional)

Prepare the Vegetables

Using a spiralizer or vegetable peeler, create zucchini noodles (zoodles). Chop the carrot, celery, and onion.

Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery. Cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

Add Broth and Seasonings

Pour in the chicken broth and add the Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.

Add Chicken and Zucchini Noodles

Add the shredded cooked chicken and zucchini noodles to the pot. Cook for another 2-3 minutes, or until the zoodles are tender-crisp. Be careful not to overcook the zoodles.

Serve and Garnish

Serve hot, garnished with fresh parsley, if desired.
