Whole30 Shepherd's Pie with Cauliflower Mash
A hearty and comforting Whole30-friendly shepherd's pie made with a savory beef and vegetable filling, topped with a creamy cauliflower mash.
Ingredients
- 1 lb Ground beef
- 1 large head Cauliflower florets
- 1 cup Carrots, diced
- 1 cup Celery, diced
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 2 tablespoons Tomato paste
- 1 cup Beef broth
- 1 tablespoon Coconut aminos
- 1 teaspoon Dried thyme
- 2 tablespoons Avocado oil

Add Aromatics and Sauce
Add minced garlic and tomato paste to the skillet. Cook for 1 minute, stirring constantly. Pour in the beef broth and coconut aminos. Stir in dried thyme, sea salt, and black pepper.

Bring the mixture to a simmer and cook for 15-20 minutes, or until the sauce has thickened slightly.
Assemble the Shepherd's Pie
Preheat your oven to 375°F (190°C). Transfer the beef and vegetable mixture to a baking dish. Spread the cauliflower mash evenly over the top.
